Creamy and spicy artichoke chicken pasta with lime flavor

I first discovered the original recipe from Foodiebride; however, I found the recipe too sour for my palate. I decided to replace lemon with lime and added one of my favorite ingredients: fresh green chili pepper. Now it is perfect! :)

Ingredients

  • 12 oz spaghetti
  • 2 to 3 slices bacon
  • 2 skinless, boneless chicken breasts, cut into strips
  • 1/4 cup flour
  • Salt
  • Pepper
  • 1 can artichoke hearts, drained and quartered
  • 2 tsp capers, drained
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1/4 cup fresh lime juice
  • 1/3 cup heavy cream
  • 1 Tbsp butter, chilled
  • 2 tsp fresh green chili peppers
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook pasta in a large pot until al dente, about 7 minutes. Drain and set aside.
  2. In a large pan, cook the bacon over medium heat until well done.
  3. Remove bacon to paper towel.
  4. In a bowl, mix together flour, salt, and pepper.
  5. Lightly coat chicken with flour mixture.
  6. Toss chicken in the pan. Fry with the leftover bacon grease until golden brown. Remove chicken and set aside.
  7. Stir in artichokes, chili pepper and capers into the pan.
  8. Deglaze the pan with the wine. Cook for 2 minutes.
  9. Add the broth and lime juice, cook for 2 minutes more.
  10. Stir in the cream and the butter to the sauce, keep stirring until well mixed. Season with salt and pepper.
  11. Return chicken to the pan. Toss in pasta and bacon into the chicken mixture.
  12. Garnish with parsleys. Serve immediately.
